Philippine Adobo

ADOBO
My comfort food
Our national dish
One way to preserve food
The taste of the Philippines anywhere in the world
I can use chicken or pork, marinade it with vinegar
Soy sauce, garlic, onions, salt and pepper, bay leaves
Cook the meat until brown, then add the marinade
Simmer until cooked. Serve with rice and peas
Also good for picnics and family gatherings
So easy to make and no two adobos are alike
No other dish can replace adobo in my heart!

    Lady Lee,I had to wipe the drool off my keyboard, looking at your photos! This is exactly the kind of dish that is so ingrained in a family, culture and nation. Yet, we share food, too and one thing I love about America is the diversity of cultures and sharing with one another our comfort foods. A close friend grew up in Hawaii. Her Dad was gifted an Adobo recipe and she shared it with me. It reminded me of a dish my Portuguese grandmother made called vina dats. She marinaded and barbequed rabbits with it. And I love peas, too!
