Tummy Tuesday : fish curry and roast sweet potato

Hello everyone! I’ve got an easy recipe for a fish curry. Ingredients include: white fish fillets, cherry tomatoes, 1 tbs. garam masala paste, 1tbs. lime pickle and a tin of coconut milk. Halve the tomatoes and fry to the pan skin side down. Chop the fish into 4cm chunks. Stir the fish, garam masala paste, lime pickle and coconut milk into the pan. Bring to a boil and simmer for 6 minutes. Taste, season with salt and pepper then dish up. Delicious!

For the roast sweet potato, preheat oven to 180 degrees. Scrub and cut the sweet potato into 3cm rounds. Place in a roasting tin with 1 tablespoon each of olive oil and red wine vinegar, a pinch of sea salt and black pepper and the Cajun spice (this includes a mixture of paprika, garlic powder, onion powder, cumin, oregano, cayenne pepper). Roast for an hour or until soft, gnarly and caramelized. Dish up and enjoy!
