Tummy Tuesday – Pork roll with garlic and parsley

Hello. We’ve tried this recipe but I think it was too thick in the end. Next time, we’ll roll it the other way or cut the pork thinner. Anyway, it was still delicious. Here goes… Ingredients include pork fillet, butter, parsley, garlic, flour, eggs, breadcrumbs, oil, paprika, salt and pepper. Preheat the oven to 180 degrees. Mix the softened butter with the garlic and parsley, season with salt and pepper. Spoon the mixture on top of the pork fillet. Roll the pork. Mix the flour and paprika in a shallow bowl. Pour the beaten eggs into another shallow bowl and put the breadcrumbs in the third. First toss the pork in the flour to coat, then into the egg bowl and finally in the breadcrumbs, shaking off any excess. Chill to help them firm up the crumb coating. Fry them over a medium heat for 1 to 2 minutes on each side. Transfer the pan to the oven and cook for about 10 minutes or until the pork is just cooked through. Serve with either spätzle or broccoli. Enjoy!
