Tummy Tuesday – Pork curry and peanut stew

Hello everyone! This is one of our favourite food. Ingredients include some pork shoulder, 2 tbs curry powder, oil, salt and pepper, red pepper, onion, ginger, canned tomatoes, 100g peanut butter, pork broth, sweet potato, 100g roasted peanuts, fresh coriander. Marinate the pork with curry powder and refrigerate for a few hours. Preheat the oven to 150 degrees. Heat the oil in a large flameproof casserole and fry the pork, red pepper, onion, garlic, ginger until lightly brown. Add the tomatoes, peanut butter and pork broth, then cover and place in the oven for 2 hours. Remove from the oven, stir in the sweet potato and bake for another 20 minutes. Adjust the seasoning and serve with peanuts and coriander leaves and rice. Enjoy!
